Honey Bunches of Oats Strawberry Sourdough

Ingredients
- 100 grams active sourdough starter
- 350 grams warm water
- 500 grams bread flour
- 10 grams fine sea salt
- 2 cups Honey Bunches of Oats with Strawberries cereal
- 1 cup fresh strawberries diced into 1/4-1/2-inch pieces
Instructions
- In a large mixing bowl, combine the active sourdough starter and warm water. Add the bread flour and fine sea salt, then mix until a shaggy dough forms and no dry flour remains.
- Cover the bowl and let the dough bulk ferment for 4–5 hours. During the first 2 hours, perform 4 sets of stretch and folds, every 30 minutes.
- Turn the dough out onto a lightly floured surface. Gently fold in the crushed Honey Bunches of Oats with Strawberries cereal and fresh strawberries. Shape the dough into a tight boule or batard, then place it seam-side up in a floured banneton.
- Preheat a Dutch oven to 450°F. Carefully transfer the dough onto a piece of parchment paper, then score the top with a sharp blade. Place the dough in the hot Dutch oven and bake covered for 45 minutes. Remove the lid and bake for an additional 15 minutes, or until the crust is a deep golden brown.
