Honey Bunches of Oats™ Almond Brittle
Honey Bunches of Oats™ Almond Brittle is a perfectly balanced blend of crispy flakes, crunchy oat clusters, and sliced almonds, lightly coated in a sweet sugary glaze for a satisfying crunch in every bite.
Ingredients
- 1½ cups sliced or chopped almonds
- 1 teaspoon baking soda
- 1 cup granulated sugar
- ½ cup water
- ½ cup light corn syrup
- ¼ cup unsalted butter
- 2 cups Honey Bunches of Oats™ with Almonds cereal
Instructions
Prepare
- Line a baking sheet with parchment paper or a silicone mat.
- Lightly toast the almonds in a dry pan over medium heat for 3-5 minutes until fragrant. Set aside.
- Measure the baking soda and keep it ready. Once you add it, things move fast.
Cook
- In a heavy-bottom saucepan, combine sugar, water, and corn syrup.
- Cook over medium heat, stirring until the sugar dissolves.
- Stop stirring and let the mixture boil until it reaches a deep golden amber color (about 300° F if using a thermometer).
- Carefully stir in the butter until melted and fully incorporated.
- Add the toasted almonds and Honey Bunches of Oats cereal. Stir to coat evenly.
- Remove the pan from heat and quickly stir in the baking soda–the mixture will foam and lighten in color.
Spread & Cool
- Immediately pour the brittle onto the prepared baking sheet.
- Spread thin with a spatula (don't overwork it).
- Let cool completely, about 20-30 minutes.
- Once fully set, break into clusters or shards.
