Prepare

  1. Line a baking sheet with parchment paper or a silicone mat.
  2. Lightly toast the almonds in a dry pan over medium heat for 3-5 minutes until fragrant. Set aside.
  3. Measure the baking soda and keep it ready. Once you add it, things move fast.

Cook

  1. In a heavy-bottom saucepan, combine sugar, water, and corn syrup.
  2. Cook over medium heat, stirring until the sugar dissolves.
  3. Stop stirring and let the mixture boil until it reaches a deep golden amber color (about 300° F if using a thermometer).
  4. Carefully stir in the butter until melted and fully incorporated.
  5. Add the toasted almonds and Honey Bunches of Oats cereal. Stir to coat evenly.
  6. Remove the pan from heat and quickly stir in the baking soda–the mixture will foam and lighten in color.

Spread & Cool

  1. Immediately pour the brittle onto the prepared baking sheet.
  2. Spread thin with a spatula (don't overwork it).
  3. Let cool completely, about 20-30 minutes.
  4. Once fully set, break into clusters or shards.
